Refreshing berry yogurt popsicles

Stay cool with a refreshing homemade berry frozen treat that not only tastes great, but also helps to improve digestion.

Greek yogurt is the new powerhouse of protein that includes natural probiotics, which can aid in digestion. Yogurt also provides much-needed calcium for strong bones, says Katie Rankell, a registered dietitian and program director for the UCI Health Weight Management Program.

Cherries work as an anti-inflammatory and improve sleep, while blackberries are full of vitamin C and antioxidants. Both fruits provide a wealth of fiber and aid in the fight against cancers.

This easy-to-follow recipe is a great activity for children and adults on summer vacation.

Refreshing Berry Yogurt Popsicles

Servings: 12  frozen pops

Ingredients

  • 1½ cup pitted fresh or frozen cherries
  • 1/2 cup fresh or frozen blackberries
  • 1 tablespoon honey
  • 24 ounce vanilla Greek yogurt
  • 12 (3-ounce) paper cups and 12 popsicle sticks

Directions

In a small mixing bowl, mash together cherries and berries. Next, drizzle the honey on top of the mixture and combine.

In paper cups, layer alternating spoonfuls of yogurt and the fruit mixture until full. Add a popsicle stick or plastic spoon to each cup and place in the freezer.

When ready to serve, gently tear the paper cup off the frozen treat and enjoy.
