Lunar New Year dishes for health and prosperity

Lunar New Year 2026 begins Feb. 17, ushering in the Year of the Fire Horse. It’s a time to gather, reflect and welcome good fortune, health and abundance for the year ahead.

For many countries across Asia, Lunar New Year is the most important holiday of all.

Jessica VanRoo, executive chef of the Susan Samueli Integrative Health Institute, part of UCI Health, who creates our recipes each month, was born and raised in Taiwan. She has her own special memories of this time of year.

“Food always plays a central role in our celebrations, with dishes chosen not only for their flavor but also for their symbolism and nourishing qualities,” she says. “Here are two of my favorites that honor the holiday and my Taiwanese heritage.”

Ultimate two-broth hot pot

The concept is simple: simmering a variety of vegetables, meats, seafood and noodles in spicy or plain broth, or both, over a burner placed in the center of the table.

Taiwan has one of the world's most vibrant hot pot cultures, with hot pot restaurants on nearly every street corner. During Lunar New Year, when families reunite from across the island and abroad, gathering around a hot pot is the ultimate expression of coming home, says VanRoo.

“The phrase “wéi lú” (圍爐) means ‘gathering around the stove’ and specifically refers to the traditional New Year's Eve hot pot meal that brings families together,” she adds.

Hot pot ingredients form a deeply nourishing, balanced meal. Broth provides collagen, amino acids and minerals that support gut health, joint and immune system function, while also being hydrating and easy to digest.

Aromatics like garlic, ginger, green onions and the optional Sichuan peppercorns and dried chilies offer anti-inflammatory and antimicrobial properties, helping to boost circulation and digestion.

Chili bean paste and tomatoes contribute antioxidants such as capsaicin and lycopene, which may support heart health and reduce oxidative stress. A variety of vegetables and proteins round out the meal with a wide range of nutrients.

Leafy greens like napa cabbage, bok choy, kale or crown daisy provide fiber, vitamins A, C, and K as well as important phytonutrients that support detoxification and immunity. Mushrooms contribute B vitamins and immune-supporting compounds, while tofu offers plant-based protein and calcium.

The lean meat, shrimp or fish in this meal supply high-quality protein, iron and zinc that support muscle repair and overall energy.

Corn and noodles provide carbohydrates for sustained fuel, making this dish both comforting and nutritionally complete.

“In our family, Lunar New Year wouldn't be complete without hot pot. We’d spend hours at the table, gathered around the bubbling pot — talking, eating and enjoying each other’s company,” says VanRoo. “The kids would compete to see who could eat more meat, while the adults would add ingredients and make sure everyone had enough to eat.”

This isn’t just about the food, it’s about slowing down, being together and starting the new year as a united family, she adds.

“These are fun to make with children,” says VanRoo. “By etching a large plus sign or cross in the top before steaming, these cakes will puff up dramatically and crack open into beautiful blossoms — a sign of prosperity for the year ahead!”

The ingredients work together to create a comforting treat that offers more than just flavor. The flours primarily provide carbohydrates for quick energy, but the addition of glutinous rice flour contributes a naturally chewy texture.

Dark brown sugar contains trace minerals like calcium and potassium. Using it alongside a smaller amount of white sugar helps balance sweetness and moisture.

The oil in these little cakes supplies essential fats that help with nutrient absorption and satiety, while vanilla extract provides small amounts of vanillin — an antioxidant, antimicrobial and anti-inflammatory.

Ground ginger rounds out the flavors, bringing gentle digestive and anti-inflammatory properties that may help reduce bloating or nausea.

When enjoyed in moderation, prosperity cakes have a warm, indulgent appeal that make any celebration more fun.

“As we say in Taiwan — Kiong-hí hoat-châi (恭喜發財) — Congratulations and be prosperous!” says VanRoo.
